Spinach & Potato Samosas (Party Sized)

Ingredients
  • 3 large potatoes (boiled, peeled & chopped)
  • 1 cup spinach (chopped)
  • 1 small carrot (grated)
  • ¼ cup coriander (chopped)
  • ¼ cup green peas
  • 1-2 green chilies (optional for kid's)
  • 2 tsps finely milled flaxseeds
  • 1 - 2 tsp lemon juice
  • ¼ tsp cumin powder
  • ¼ tsp coriander powder
  • ¼ tsp garam masala powder
  • Salt (to taste)
  • 1 tsp olive oil
  • 10 Flour tortillas
Instructions
  1. In a large frying pan add the olive oil and heat for 1 minute.
  2. Combine all the ingredients for the samosa filling into a frying pan (excluding the tortillas).
  3. Cook over low heat for 5-7 mins, while continuously stirring and blending the ingredients together.
  4. Remove the samosa filling from heat.
  5. Cut the flour tortillas into long strips.
  6. Take one flour tortilla strip and form a cone shape in your hand.
  7. Using your other hand, scoop some of the samosa filling into the cone.
  8. Keep wrapping the tortilla strip around the samosa filling, until there is only a small flap left.
  9. Tuck the remaining tortilla edge under to seal.
  10. Fry or Bake the samosas at 375 F or 190 C until golden brown
